Green beans are a low-acid vegetable, which means they need to be pressure canned (not water bath canned) to be stored safely. By using a pressure canner, you can lock in that garden flavor and enjoy your beans all year long in soups, stews, casseroles, or straight out of the jar.
Step-by-Step: How to Can Green Beans
🥢 Prep the Beans
Wash your beans well.
Trim off the ends and cut them into 1–1.5 inch pieces.
🔥 Blanch/Boil
Boil the beans in a pot of water for about 5 minutes.
This step helps keep their color and texture.
🥫 Prep the Jars
While the beans are boiling, clean and sterilize your mason jars.
Make sure your lids and bands are also clean and ready to go.
🌊 Hot Pack Method
Pack the beans loosely into jars, leaving 1 inch of headspace.
Pour the hot water (the same water you boiled the beans in) over the beans until covered.
💨 Pressure Can Safely
Place the jars in your pressure canner.
Process pints at 10 pounds of pressure for 20 minutes.
